Coconut Water Bircher for Breakfast (with Ginger Spiced Stonefruit Salsa)
I do circle back around to oats every now and again, it reminds me of mum making porridge and use hiding knobs of butter in pockets from her - and then sneaking golden coated mouthfuls of soft oats on a cool morning. Amazing. This recipe isn't hot and doesn't have butter - sorry - but it is quick and really delicious.
I prefer to use whole fruits, berries and apples on top make it visually more appealing which goes along way to getting those gastric juices happening in the mouth to help with better digestion cues from the get-go.
Want this recipe a little creamier? Try adding coconut cream if you want it a little creamier, and definitely more luxe.
This recipe is based on five serves – use them as breakfast or snacks, or whip it with some coconut milk as a satisfying smoothie!
Coconut Water Bircher
Makes 5 serves. Wheat free. Dairy Free.
- 2 1⁄2 cups oats
- 1⁄2 cup coconut
- 1 cup good bits (chopped dried fruit, seeds, nuts)
- 1 tsp cinnamon
- a couple of pinches of salt
- 500ml coconut water
- 250ml water
In my typical style, combine it all and pop it in the fridge for a few hours or overnight - add a little water to loosen the mix before eating it if it appears a little dry!
I will often serve this with coconut yoghurt, chia jam and breakfast sprinkles or fresh apples but with so much beautiful stone fruit around I thought I would include this recipe for a stonefruit salsa too.
Stonefruit + Ginger Salsa
- 3-4 pieces stone fruit, pitted and diced
- 1 knob ginger, grated
- 1/4 tsp cinnamon
- small handful mint, shredded *optional
- Juice and zest from one lime
- 1 teaspoon honey/maple/rice bran syrup *optional
- pinch salt
Combine, and store in air tight container in the fridge. This is a gorgeous salsa to add to a cheese plate (with cashew cheese it is RIDICULOUSLY good), or even on top of chia pudding or banana nice-cream.
