Quick and Easy Pumpkin + Miso Soup.
Delicious and nutritious spin on your pumpkin soup! So darn easy and it hardly needs an intro - hop to it, and enjoy the warm 'hug' that this deep nourishing soup provides!
- 3 cups pumpkin, diced (around 1 medium pumpkin)
- 1 stick celery, chopped
- 1 carrot, chopped
- 1 knob ginger, sliced
- 1 orange, peeled
- 2 tablespoon brown rice miso
Bring the first five ingredients to boil with 2 cups broth (or water) over medium heat. When boiling, reduce to simmer for 35-40.
Off the heat, stir through 2 tablespoon brown rice miso. Season further as required.
Serve with shredded kale and roasted pepitas, maybe a little fresh chilli!
