Meet Sabrina. She is your catalyst for change and a soulful entrepreneur, who takes on success as her only option. She is the founder of and creative director of She's Eclectic Magazine.

If you are looking for someone who blends hippy spirit into the urban money making vibes, here she is. She attracts holistic minded women who are striving to design the life they know is truly meant for them -and she does it so darn well!

Three things are apparent and keep showing up in humans that are leading a pretty happy and purposefully productive life - there is always some mention of 1) nature, 2) meditation and 3) movement in the morning. Sabrina fits this to a tee, and follows this with social media pondering and extra long time to get ready and sit down to breakfast with her husband.

Connection with self, people and social media that is done with ease and grace. What a way to start the day!

The other thing that strikes me about this woman is her underlying theme of simplicity weaving through. Simplicity through eating real food means the same to her as it does to me…there is only ever one over-arching guideline that you need to apply to anything that passes your lips.

Eat like you give a f###.

Do it with heart and with purpose, right? For me, it applies to life too.

Eat food that is good for you, organic, fresh, homemade
Eat food that is good for others, buy local and fair-trade
Eat food that is good for the planet, plant based, organic, sustainable won’t be surprised that, for Sabrina, pure water is her fave wellness product, and deep breathing is her number 1 dissolver of stress.

Simplicity is beauty, and the best things in life are free!

On a similar note, I am adoring the re-emergence of meals that DON’T take 5 mins to whip together. Enjoying the time in the kitchen for what it is - the healing and connection - not something to bypass and begrudge every day - so when you are next in there try these vegan brekkie pancakes on for size!

 Guest Post: Sabrina from Hello Freedom Lifestyle and her recipe for vegan pancakes!

The Ingredients:
1 ripe fairtrade banana
1 cup vegan milk of your choice (I prefer rice, cashew or almond milk)
3 Tbs buckwheat flour
pinch innamon
pinch pink salt

To decorate:
Shredded coconut flakes
Cacao nibbs
Coconut Yoghurt
Pure mapple syrup or brown rice syrup
1/2 banana
juice of 1/2 a lemon

Coconut oil for frying

In a blender, mix 1 ripe banana and milk. Add this to your mixing bowl and mix well with the flour, a pinch of salt and cinnamon - you want a thick pancake batter if it's too runny just add some more flour. Panfry, using coconut oil.

Decorate with anything you love, I used maple syrup, coconut yoghurt, cacao nibs, 1/2 banana and coconut flakes. In summer I might use berries and flowers instead. Go wild!! 

NOTE: Always use organic and fair-trade and make the milk yourself, so you know what's in it.
