Sweet or Savoury Buckwheat Crepes w Tahini Sauce

So the pictures just don’t do these any justice - they may just be my fave recipe of the YEAR! Gluten free pancakes can be a pain, and on the same note, finding a lunch wrap that isn’t full of junk - gluten free or not -isn’t easy either.

This recipe has the potential to more than meet the mark on both.

This recipe is awesome as a SAVOURY meal, and as a SWEET snack too - and yes, the savoury crepes hold up as a wrap to use for a couple of days after you make them!

Sweet or Savoury Buckwheat Crepes w Tahini Sauce

 The Wellness Collective:  Buckwheat Pancakes.  Gluten Free, Plant-based.


Prepare a couple of hours before, or even night before:

  • 1/2 cup buckwheat groats, soaked over night (or at least 2 hours)
  • 2 Tbs chia, whisked with 3 tablespoons water #chiaegg

..and then you will need these when you are ready to cook!

  • 3/4 cup milk (cow, soy, rice, coconut)
  • 1/2 tsp turmeric
  • 1/2 tsp cumin
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder
  • pinch salt and pepper
  • Coconut oil for cooking

Coconut Tahini Dressing

  • 1 Tbs tahini
  • 2 Tbs coconut cream 
  • 2 Tbs water
  •  juice of one lime 


1. Make sure you have made your chia egg, and soaked your buckwheat.
2. Rinse the soaked buckwheat and add to blender along with other ingredients. Blend for 2 mins. Sit for 10 mins so baking powder can lighten the mix.  In that time, whisk the ingredients for the dressing together and set aside.
3. Heat 1 Tbs of coconut oil over a medium to high heat pan and add 3 spoons of mix, slowly moving the batter out to create a crepe the size of a small dinner plate.

These guys cook fast and you may only need 1-2 mins each side until they are ready to flip!  Flip when ready, cook for another minute and then remove from pan.

I cooked up some beans with garlic and kale, blistered some toms and popped some sunflower seeds, pepitas and coconut flakes in a pan with a pinch of cayenne pepper and used the crepes as wraps for a really nutrient rich and super yummy wrap! 


Remove the cumin and turmeric and add

1/2 tsp vanilla extract

 2Tbs maple (or desired sweetener)

along with the juice of one lemon.

Feel free to add 2 Tbs of cacao to make it some-kind-of-chocolate heaven!  

Amendments for the dressing?  Instead of 2 Tbs water, add 1 Tbs water and 1 Tbs maple.

Fry up as little pikelets and top with my chia jam, or even just some sliced banana and dusting of cinnamon.
